At Lima te Llena, safety is always our first and foremost priority and concern. We have long standing and proven relationships with all the vendors that we work with in order to ensure proper hygiene standards are met; in fact, many of the vendors themselves pride themselves on their attention to cleanliness and we didn't have to teach them a thing! We have carefully chosen who we patron: those who observe the correct methods for food cleaning, preparation, cooking, and storage. As well, we work only with vendors who have a consistent customer base to ensure their food or ingredients are always moving and not kept still and stale... and also means they're creating flavors that the people love!
As for the drinks, when we drink water on our tours, we always provide/use bottled water. In juices and other prepared beverages, the water used is always boiled ahead of time per the necessary customs of life in Lima.
"we visited the local market, tried many different peruvian dishes the way locals are trying them. since i have read that LtL made sure they lead tourists only to the stalls where the food is safe we had no fear. and the food was really fresh and tasty. the ceviche we had there was amazing. wha's more one the ladies in our small group had a VERY sensitive stomach and after the trip there were NO problems whatsoever so the food must have been fresh and safe. and this is a very good sign as she has visited a lot of sometimes michelin star restaurants where she had problems afterwards."
